The diastatic number is one of the indicators by which it is possible to determine the naturalness and maturity of honey, but it is far from the only one. With a significant heating of honey, the diastase number decreases, and by its indicator it is possible to check whether the honey was specially heated. The diastatic number of honey depends on the time and place of its collection. For example, in northern varieties it is always higher than in southern ones. The diastase number also depends on the type of honey. For example, this indicator is lower for acacia honey than for buckwheat honey. The diastasis number can be determined only in the laboratory.
