Pancake cake with honey
The traditional Russian dish – pancakes – can be simply eaten by dipping it in liquid honey, or it is good to smear it inside while hot.
There is an option to add honey instead of sugar before baking into the dough itself. And from a stack of pancakes you get the most delicate pancake cake.
To get started, bake 15-20 pancakes using any recipe, but yeast is best, as thin, delicate pancakes will not work here. Also, do not add too much sugar to the dough. Grease each pancake on both sides with oil – it should be well absorbed so that the pancakes are not dry.
Then we prepare a “cream” of honey, cinnamon and grated apples (Antonovka is ideal). Lemon zest can be used instead of apples, plus a spoonful of lemon juice to balance the sweetness of the honey. Knead the “cream” well, coat each pancake with it, form a cake and refrigerate for a couple of hours.

A traditional Russian honey drink with spices will warm you in bad weather and stop an impending cold. For him we will need:
1.5 l. water;
100 g of sugar and honey;
bay leaf, cinnamon, cloves, dried mint – to taste.
Stir honey and sugar separately in glasses of warm water. Then put them on the stove in different containers, bring to a boil over medium heat, stirring constantly. Pour sugar syrup into honey syrup, mix well and simmer for 5-7 minutes, so that the water evaporates a little. Use the remaining water for spices – add them to boiling water, keep on fire for a few more minutes, then strain. Pour the “spicy” water into the honey-sugar syrup, stir again.
Poppy seed roll with honey
For him you will need:
150 g butter;
100 g of liquid honey;
250 g of sugar;
500 g of poppy;
500 g flour;
a pack of yeast;
1 tsp salt;
400 ml. milk.
How to cook:
Heat 100 g of milk, add yeast and a spoonful of sugar, stir well and put in a warm place, covered with a towel; you need to wait until the yeast rises slightly.
Put 100 g of milk on the fire, add 50 g of butter and stir until it melts, season with salt. Add yeast mixture, 2 eggs and 2 l. Sahara. Stirring gradually (preferably in a mixer), add flour until the dough becomes dense and homogeneous so that a lump can be rolled out of it. Then put the dough in a warm place for 2-3 hours.
For the filling, wash the poppy seeds, steam it in boiling water for 10 minutes, cover it with sugar, pour in honey and 100 g of soft butter. After adding a little milk, we put it on the fire and, while stirring, continue to pour in the milk so that in the end the mixture is not liquid, but soft and crumbly. Thus, we simmer the poppy for about an hour.
Roll out the matched dough as thin as possible, grease with a thick layer of poppy filling, gently roll up the roll. Grease the top with a mixture of eggs and a small amount of milk, put in an oven preheated to 150-180 ° C. Bake for 30-40 minutes, gradually lowering the temperature.
