BREAKING HONEY

It is important to distinguish between honey and honey layering during the setting process. If honey from the bottom has crystallized (sat down), and the upper part is in a liquid state, while the consistency of honey is viscous, then the honey is in the process of “setting”.

If the consistency on the surface of honey is too liquid (like water), this means that honey, most likely of poor quality, can ferment. Most likely this honey was pumped out unripe, without a wax seal of the honeycomb cell.
