Why does honey crystallize?
Crystallization (cage) is an absolutely natural process for natural honey. This is simply explained: from a chemical point of view, honey is a supersaturated solution of sugars, the equilibrium state of aggregation of which is crystallized (solid), therefore any honey has either already sat down or is “on the way” to this.
