Natural honey is divided into honeydew and flower. The first is made from nectar collected from dew on plant leaves, flower – directly from pollen inside the inflorescences. Floral is considered more valuable, high quality and useful, its aroma is more pleasant, its taste is richer. Bees often make honey from several types of trees and herbs: such a product is called polyflora or herbs. Monofloral – honey from one plant: sunflower, linden or buckwheat. The beneficial properties of flower honey depend on the plant from which the nectar was collected, on the region and place of collection. The highest value is a product from forests, steppes and mountains, remote from civilization: Bashkir, Altai, Kyrgyz.

Depending on the area of ​​collection, one can distinguish classic floral honey, as well as forest and mountain honey. Forest honey sets slowly, its color depends on the prevailing plants in its composition and can be either light or dark brown. It has a pronounced smell of nectar and a sweetish taste with a slight bitterness.

Mountain honey is valued primarily for its environmental friendliness – the herbs from which bees collect nectar for it grow high above sea level. Mountain honey, as a rule, has a complex composition, including medicinal herbs: St. John’s wort, lemon balm, motherwort, thyme. It is a very aromatic product of dark color with a bright taste. Flower honey is a real storehouse of beneficial substances that have a beneficial effect on the body, and it is not so much where the bee product was collected as its quality.
