How quickly does honey crystallize?

Different types of honey crystallize in different ways. On average – within 1-3 months after pumping out of the honeycomb. Sunflower and colza varieties crystallize very quickly – within 1-2 weeks after pumping. Fast crystallization process in honey collected from rapeseed, mustard, sainfoin, sow thistle, cotton, alfalfa, and honeydew honey. Acacia honey, on the other hand, can remain liquid for years. Honey collected by bees from sage, cherry, orange also slowly crystallizes.
Honey from linden, raspberry or fireweed, stored in a tightly sealed container at temperatures above or below 10oC-15oC, does not crystallize for a long time.
