How to taste honey?
Place 30-35 grams of honey in a glass or plate. Stir the honey with a spoon, bringing it closer to your nose and inhaling slowly several times. At first, you will only smell a strong scent, but then your sense of smell will adapt and it will be easier to sense faint scents.
Next, take some honey and put it in your mouth. As it dissolves, move the honey to the back of your mouth. This will help clarify the flavor. This method is called retronasal. The aroma of honey should be appropriate for its variety. For example, acacia honey has a light aroma with a pungent spicy note. The aroma of linden honey is sweet, fragrant, buckwheat – slightly bitter, deep. To taste the honey, crush a small portion between your tongue and palate. It is recommended to check the taste of honey several times and only after warming up the honey in a water bath at temperatures up to 30 degrees. Chestnut and buckwheat varieties are astringent, light varieties should not have a bitter taste. When tasting honey, pay attention to the fact that it should not have a sour aroma or aftertaste, as well as an aroma that is not characteristic of this variety.
