Spring is a special time for Orthodox Christians who celebrate Bright Sunday – Easter at this time. Many housewives strive to bake Easter cake from natural ingredients at home. One of the simple and delicious recipes for Easter cake, which remains delicious even after several days of storage – with honey. It is better to buy lime honey for these purposes, but any other honey will do, as long as the product is of high quality.

Classic honey cake

So, we need:

3 eggs;
100 g of milk;
a bag of vanilla sugar;
100 g butter;
small package of yeast;
500 g of wheat flour;
100 g of sugar (you can replace the whole with honey);
1 tbsp. l. honey;
salt, raisins to taste.
First, prepare the dough – for it, add flour (100 g) to the yeast and carefully pour in warm (not hot!) Milk. After mixing, tightly wrap the bowl with dough with cling film, on top with a towel and put in a warm place. While the dough comes up, rinse and dry the raisins well; Mix eggs with sugar, honey and vanilla sugar, then beat until frothy. It is better to buy lime honey for cake in advance. Pour the egg mixture into the matched dough, add soft butter and mix well. Then add the raisins and flour. A firm, non-sticky dough should come out. We roll it out well, then, wrapping it up again, put it in a warm place for an hour – it should distance and rise. We put the dough in molds for cakes so that it fills about half of the container (the bottom can be covered with baking paper) and put in an oven preheated to 180-200 ° C. The baking time varies depending on the size of the cake from 30 to 45 minutes. We check the readiness with a toothpick.

Honey and curd Easter

The next Easter recipe is even simpler, but such a product is no less tasty, and even healthy due to the content of dairy products and honey. The hardest part for this recipe is to buy proper quality lime honey. For honey and curd Easter you will need:

500 g dry cottage cheese;
2-3 st. l. butter;
4 eggs;
2 tbsp. l. honey and sugar (you can take only honey)
3 tbsp. l. sour cream or cream.
Separate the yolks from the eggs, add butter, sugar and honey, beat everything into a lush foam. Grind the cottage cheese so that there are no lumps, add sour cream, mix. Combine the curd mass with the honey mass, transfer to the prepared form, put in the refrigerator under oppression for a day.

In addition to traditional Easter cakes, you can prepare other dishes with honey for the Easter table. Christ’s Sunday is the time to leave a long fast, so you can pamper your loved ones with meat baked in the oven with honey marinade, and fish with honey and soy sauce, and light spring dishes.

Easter salad

Natural linden honey will be an excellent dressing for any salad of raw vegetables and fruits. For example, for a vitamin apple-orange salad, you need to take:

juice of half a lemon;
chopped walnuts and raisins to taste;
1 orange;
1 tbsp. l. liquid honey;
1 orange;
1 carrot;
2 sweet and sour apples.
Three carrots on a coarse grater, cut orange and apples into small pieces. Mix everything, sprinkle with nuts, squeeze lemon on top and pour generously with liquid honey. This salad is not only a dish of Russian cuisine suitable for the Easter table, but also a vitamin aid in the spring season.
